Ingredients and spices that need to be Make ready to make Kwati- A Healthy Mixed Beans Sprout Stew:
- Total 300 gms
- 50 gms Black Gram / Kala Chana
- 50 Small Kidney Beans / Rajma Beans
- 50 gms Cow Pea/ Lubiya
- 50 gms Field Pea/ Dried White pea
- 50 gms Chickpea/ Kabuli Chana
- 25 gms Mung Beans /Green Moong Dal (whole)
- 25 gms Black Lentil/ Black Urad Dal (whole)
- 1/4 tsp Turmeric powder
- as per taste Salt
- 1 Tsp Mustard oil
- 2-3 tbsps Ghee/ Ghew
- 1 Whole dry Red Chilli
- 1/2 Tsp Carrom seeds / Ajwain
- 2 Bay leaves
- 1 onion chopped
- 2 Medium sized tomatoes chopped
- 1 tbsps Ginger Garlic paste
- 1.5 Tsp Cummin powder
- 1 Tsp Coriander Powder
- 1 Tsp Kashmiri Chilli powder or Chilli powder of your choice
- 1/2 Tsp Garam Masala powder
- as required Chopped Cilantro to Garnish
Steps to make to make Kwati- A Healthy Mixed Beans Sprout Stew
- Wash and soak the beans overnight and leave it for 24-48 hours to sprout. Longer you keep longer are the sprouts. I just keep it for 24 hours. Wash the bean sprouts thoroughly.



- Pressure cook the bean sprouts for 7-8 whistles with turmeric, salt and mustard oil. Let it cool and release pressure.

- Heat ghee in a kadai, add and temper the whole dry Chilli, carom seeds and bay leaves. Then add the chopped onion, saute it, before browning add the ginger garlic paste and saute it. Then add the tomatoes and saute it. Add the Coriander and Cummin powder, Kashmiri Chilli powder, salt and mix well and bhunno it. Add water as needed so that the masala doesn't burn.



- When the tomato and all masala gets cooked nicely and the ghee seperates, add the Garam Masala powder and the cooked beans. Mix well and let it cook for 10-15 minutes. If needed add water. Check consistency of the jhol or soup wanted, adjust accordingly. Check salt and add if needed. Put it in a serving bowl and garnish with cilantro. You can top it with chopped onion, chillies, and tomato too and add a dash of lemon juice. Serve hot. I love to have with roti or Ajwain Puri.
